A lovely light and refreshing spritz is the perfect specialty cocktail for an Easter celebration. This seasonal drink is as delicious as it is beautiful. The trick is to find very ripe mangos for maximum flavor, so plan ahead to allow mangos time to fully ripen.
ingredients
- ½ cup sugar
- ½ cup water
- 1 very ripe mango
- 1 ounce elderflower liqueur
- 4 ounces Prosecco
- 2 ounces soda water
- Mint leaf for garnish
directions
- To make a simple syrup, place the sugar and water into a small saucepan and set over medium-high heat. Cook, swirling the pan a few times, until the sugar has completely dissolved, about 3 minutes. Let cool completely.
- Peel and cube the mango and add it to a blender along with 2 tablespoons of the simple syrup. Puree until very smooth.
- Add 2 tablespoons of the mango puree along with the elderflower liqueur to a wine glass. Fill the glass with ice and add the prosecco and soda water. Gently stir to combine and garnish with a mint leaf. Serve at once.
notes
Mangos should be very soft to the touch for this drink. If they aren’t really ripe, they won’t blend properly.
You can make the mango purée a few hours in advance and keep in the refrigerator.
Simple syrup can be made up to 5 days in advance and stored in an airtight container in the refrigerator.
You can use other fruits in this cocktail including apricots, pineapple and peaches.
1 mango with the simple syrup and water will yield about ¾ cup puree. This is enough for about 6 cocktails. You can easily double this recipe.
