A super refreshing, hydrating and simple frozen drink perfect for a warm summer day when watermelons are at their best! Just three ingredients and the Ninja SLUSHi are all you need for this healthy, delicious and perfectly frozen watermelon slushie recipe. Coconut water is added for its rich electrolyte content.

ingredients

  • 12 cups cubed watermelon (about 1½ mini seedless watermelons)
  • 1½ cups coconut water
  • Juice of 2 limes
  • Lime slices for garnish

directions

  1. Working in batches, puree the watermelon with the coconut water in a food processor fitted with a metal blade.
  2. Place the Ninja SLUSHi flat on a counter, plug it in and turn on the power. Open the cover on the top of the machine and carefully pour in the watermelon juice/coconut water mixture and the lime juice. Close the cover and select the “frozen juice” preset. The time may vary but the temperature LED light will blink until it reaches the perfect temperature. This will take about 35 minutes, at which time the machine will beep several times and the LED temperature light will no longer blink.
  3. Pour slushies into glasses and garnish with lime slices.

Seedless watermelons do have small white seeds that are perfectly fine to eat. You can strain the pureed watermelon, if you prefer, but it isn’t necessary.

If your watermelon is super ripe and flavorful there is no need to add a sweetener. However if you would like to, you can add a couple tablespoons of agave, honey or maple syrup.

Mint is a lovely accompaniment to this frozen watermelon slushie recipe. You can make a mint simple syrup to add to the drink.
