A Mai Tai is a classic rum cocktail made with two kinds of rum: white and dark. The white rum is mixed with Cointreau, orgeat and lime juice. The dark rum is poured over the top of the cocktail to create a dramatic dark layer on top.

ingredients

  • 1 ounce white rum
  • ½ ounce Cointreau
  • ½ ounce orgeat syrup
  • ½ ounce fresh squeezed lime juice
  • 1 ounce dark rum
  • Garnishes: pineapple wedge, maraschino cherry

directions

  1. Fill a cocktail shaker with ice and add the white rum, Cointreau, orgeat syrup and lime juice. Shake vigorously for 15 seconds and pour into a cocktail glass filled with ice. Slowly pour the dark rum over the top of the cocktail and garnish with pineapple wedge and maraschino cherry. Serve at once.

notes

Orgeat is a sweet syrup made of almonds and sugar with either rose water or orange flower water. You can find it at any liquor store and at many grocery stores.

You can use orange curacao, triple sec or Grand Marnier in place of Cointreau in this layered Mai Tai recipe.

Pour the dark rum just before serving to maximize that layered effect.
