These adorable no-bake treats are (almost) too cute to eat, but you wouldn’t want to miss out on the decadent cookie truffles inside! Decorating the bunnies is more fun with a crowd, so get the whole family together for a little holiday crafting. Just keep an eye on the finished treats; unlike real bunnies these ones don’t multiply—they disappear!
ingredients
- 33 vanilla crème sandwich cookies (such as Oreo Goldens), from one 13oz (364g) package
- 6 oz (168g)cream cheese, softened, cut into 3 pieces
- 12 oz (336g) white chocolate candy melts
- 1 tablespoon (15mL) coconut oil, optional
- 2 cups (140g) unsweetened shredded coconut
- 64 sliced almonds (about 6g)
- 48 mini marshmallows, halved crosswise
- 32 pastel confetti sprinkles
directions
- Place the sandwich cookies in a food processor and pulse until sandy. Add the cream cheese and pulse until a soft dough forms. Portion the dough into 1 tablespoon (15mL) mounds and roll into balls. Chill 15 minutes.
- Melt the candy melts according to package directions and stir in the coconut oil, as needed, until the mixture is just thin enough to coat a rubber spatula, and transfer to large bowl. Place the shredded coconut in another large bowl. Line a rimmed baking sheet with parchment paper.
- Working with one cookie truffle at a time, use a rubber spatula to roll in the melted chocolate, tapping on the edge of the bowl to remove excess, then drop into the coconut and toss to coat. Transfer to the parchment-lined baking sheet and repeat with remaining truffles. Re-warm the remaining candy melts, if necessary, and transfer to a tipless piping bag or a zipper-lock bag. Use kitchen shears to snip off the tip of the piping bag or one corner of the zipper-lock bag to create a narrow opening.
- To decorate the bunnies, use the tip of a paring knife to create two small slits on the top of a truffle. Pipe a small bead of chocolate into each slit and insert 2 sliced almonds, forming the ears. Use more chocolate to affix half a marshmallow on the back of the truffle to form the bunny tail, and 2 half marshmallows on the front to form the paws. Pipe a small bead of chocolate in the center-front of the truffle and affix a confetti sprinkle to form the bunny nose. Repeat with remaining truffles.
- Store in the refrigerator for up to 1 week. Bring to room temperature before serving.
