summary
The ultimate in comfort food, banana bread is everyone’s favorite! We’ve made a healthier gluten-free version by using almond flour and reducing the sugar. The key to the best banana bread is very ripe bananas for the most intense flavor.
ingredients
- 2½ cups almond flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 3½ very ripe bananas, divided
- 2 large eggs
- â…“ cup plain Greek yogurt
- ½ cup sugar
- 2 teaspoons pure vanilla extract
- ½ cup plus 2 tablespoons chopped semisweet chocolate
directions
- Preheat the oven to 350°F. Lightly coat a loaf pan with non-stick cooking spray.
- In a small mixing bowl, whisk together the almond flour, baking soda, baking powder and salt.
- In a second small bowl, use a fork to mash 2½ bananas and add them to the bowl of a stand mixer fitted with a paddle attachment. Add the yogurt, eggs, sugar and vanilla to the mixer bowl and mix until combined. Add the almond flour mixture and stir just until everything is incorporated, then stir in ½ cup chopped chocolate. Pour this into the prepared loaf pan.
- Cut the remaining banana in half, lengthwise. Place the two banana halves, seed side up, next to each other on top of the loaf. Sprinkle the remaining 2 tablespoons of chocolate over the top.
- Transfer the loaf to the oven and cook until a toothpick comes out clean, about 50 minutes. Let the banana bread cool for 15 minutes in the pan and then turn out to a wire rack to cool completely. Slice and serve.
notes
You can eliminate sugar all together by substituting with maple syrup or honey.
The addition of yogurt adds some protein and also makes this healthy chocolate banana bread recipe super moist.
The more brown your bananas are, the more banana flavor your bread will have.
